Maraschino-Cherry-Shortbread-Cookies




*Ingredients:

°1 c unsalted butter 
°1/2 c powder sugar
°1/2 tablespoon vanilla extract
°2 cups all-purpose flour
°1/2 teaspoon of salt
°3/4 cup chopped maraschino cherries (spread cherries on paper towel to drain well or you can use dried maraschino cherries)
°2/3 cup chocolate chips

*Instructions

Mixing flour & salt, set apart. Create 1 cup softened unsalted butter with 1/2 cup powdered sugar, stir in vanilla. Add flour and salt mixture and mix until just beginning to form larger clumps. Combine the chocolate chips and maraschino cherries. Form the dough into the log and press it down well or it will fall apart when you slice the cookies (the log should be about 2 inches thick) Wrap it in the plastic wrap and let it cool in the refrigerator for at least 1 to 2 hours.    Preheat oven to 325 F & line a baking sheet with paper. Cut the log into slices 1/4 or 1/3 inch thick (if the slices are crumbling, press them together with your hands) and place them on a baking sheet with an inch of space between .   Bake the cookies for 10-15 minutes (until they start to lightly brown on top) Let them cool for 5 minutes on a baking sheet before transferring them to a wire rack to cool completely .
